Healthy 20 Minute Sausage And Veggies
Our family just loves to experiment with new and different kinds of food and recipes. Most recently we have been baking a lot of one sheet wonders- I call them that because they have literally saved my life on the nights when we need to get something not only healthy but delicious on the table and in a hurry. I love love love them. There are so many different variations you can throw together. Tonight I threw together Sausage and Vegetables and were they ever tasty! I got the idea from Gimme Delicious which is a food blog full of all kinds of scrumptious recipes- I could watch her cooking videos for hours if she didn’t make me so hungry that it hurts! I have several lined up to try next. I know I know- you probably want the recipe right about now rather than listen to me go on and on which I really can’t blame you especially if you’re waiting to try the recipe yourself— you definitely should by the way! So here it is:
Healthy 20 Minute Sausage And Veggies
Ingredients
- 3 Cups Smoked Turkey Or Chicken Sausage
- 2 Cups Sweet Potato Diced into 1/2" cubes
- 2 Cups Broccoli Florets
- 1 Cup Bell Pepper (any colors you like) Chopped up
- 2 Cloves Garlic Minced
- 2 Tbsp. Olive Oil
- 1 Tbsp. Italian Seasoning
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
Instructions
- Preheat oven to 400F.Slice the sausage into 1/2" rounds.Dice the sweet potato into 1/2" cubes.Add the sausage, veggies, and minced garlic to a large baking sheet, drizzle with olive oil and sprinkle Italian seasonings and salt and pepper over mixture. Toss the mixture with your hands ensuring all pieces are coated equally.Bake for 20 minutes flipping halfway.Serve with rice, quinoa, in sandwiches, or as is for weight loss.
